(new low fat, lower sugar version)
4 Cups Rhubarb cut in 1" pieces
1 teaspoon grated lemon rind
1/2 cup Sugar 1 white yellow ( I used a lemon cake mix)
Prepare cake mix but only use 1/2 the oil, substitute other 1/2 with apple sauce. Pour in to greased and floured 9x13 pan. top with Rhubarb and lemon rind ( I used 1/2 Rhubarb 1/2 strawberries). Sprinkle sugar over top and bake at 350 for 40-45 min.
